So I just gave this a shot..

I think I should have a) cooked the mushrooms a little longer in the beginning, b) cooked them a little longer towards the end to reduce the sauce more, and c) used actual cream rather than the milk that I had on hand..

That said, heavy petting in a pan was still pretty damned good ;)
